Cook the rice according to the package instructions.
Peel garlic and ginger.
Add the garlic, ginger, and the ingredients mentioned below to a blender and blend until smooth.
Dice the tofu and carrot.
Cut the zucchini lengthwise into quarters. Remove the seeds and pulp from the center of the zucchini. Chop the pulp finely and cut the remaining zucchini into approx. ¾ in slices.
Heat the canola oil in a non-stick frying pan over medium heat. Fry the tofu until golden brown. Pour in half of the sauce, reduce completely and set aside.
Heat the canola oil in the pan and fry the carrots and zucchinis over high heat for approx. 1-2 minutes. Add the remaining sauce and cook for approx. 5 minutes.
Turn off the heat, add the tofu to the pan, warm with the residual heat and serve with the rice.
