Prepare the couscous according to the package instructions using vegetable broth instead of water.
Thinly slice the onion, finely chop the mint and dice the apple.
In a colander, rinse the shrimps, put on a plate and pat dry.
Heat the olive oil in a non-stick frying pan over medium heat. Fry the shrimps for approx. 2 minutes from each side.
Season with salt and pepper, remove from the pan and set aside in a bowl.
Heat the olive oil in the pan. Add the onions and apples and fry until the onions turn translucent.
Add the couscous, mint and the rest of the broth and turn off the heat.
Serve the couscous with the shrimps.
