Halve the cucumber lengthwise and cut into approx. ½ in thick slices. Cut the green onion into rings and add both to a bowl.
Dice the avocado, halve the olives, coarsely chop the mint and add to the bowl.
Add the lemon juice, balsamic vinegar, olive oil, salt, and pepper into a mason jar. Screw the lid on tightly and shake vigorously until combined.
Drizzle the dressing over the salad and toss lightly until coated evenly and serve with the bread.
