Cut the tofu into approx. ½ in thick slices. Chop the carrot, dice the mushrooms, finely chop the onion and garlic and put everything except the tofu in a bowl.
Heat the canola oil in a non-stick frying pan over high heat. Fry the tofu from both sides until golden brown and remove from the pan.
Add the canola oil and herbs into the pan, turn the heat to medium and fry the onions, garlic, carrots, and mushrooms until the onions turn translucent.
Add the tofu, bean sprouts, and soy sauce to the pan and fry for approx. 4-5 minutes.
