Remove the broccoli florets from the stem, put in a bowl and cover with boiling water. Drain them in a colander after approx. 1 minute and shock with cold water.
Preheat the oven to 400 °F. Line a baking tray with parchment paper.
Finely chop the onion, garlic, and parsley and put in a bowl.
Blend broccoli in a blender until you get a rice-like consistency. Add to the bowl alongside the egg, cheese, and breadcrumbs and mix thoroughly.
Season with salt and pepper.
Form golf-ball-sized balls, place on the baking tray and bake for approx. 20-25 minutes on the middle rack of the oven until golden brown.
Finely chop the chives. Mix the yogurt, water, salt, pepper, chives, and lemon juice until creamy.
Serve your Broccoli fritters with the yogurt dip.
