Clean and thinly slice the mushrooms. Cut the green onion into thin rings.
Heat the canola oil in a non-stick frying pan over medium heat. Fry the gnocchi until golden brown and set aside.
Heat the canola oil in the same frying pan over high heat and fry the meat until browned, remove from the pan and set aside.
Turn the heat to medium and fry the green onions and mushrooms for approx. 3-4 minutes until the vegetables are slightly browned. Deglaze with white wine and reduce to half.
Stir in the vegetable broth, sour cream, and mustard and let simmer until the sauce is creamy.
Season with salt and pepper. Turn off the heat, add the gnocchi and meat to the pan and warm with the residual heat.
