Preheat the oven to 400 °F. Peel and cut the potatoes into approx. ½ in thick fries. Put them in a bowl and mix with the olive oil and salt.
Spread the fries on a baking tray lined with parchment paper and bake in the oven for approx. 20 minutes. Turn the fries halfway through the cooking time.
Place the cod in a bowl with lukewarm water. Change the water every minute until the cod is defrosted. Put on a plate and pat dry.
Season the fish with salt and pepper.
In a deep dish mix the egg with milk until combined.
Put the flour and breadcrumbs onto two separate plates. Place plates in front of you side by side. Arrange the plates in the following order: flour, egg, breadcrumbs.
One at a time, dredge the fish in flour until the surface is covered. Dip into the egg to coat. Allow the excess to drip off for a few seconds, then roll in the breadcrumbs until coated.
Heat half of the oil in a non-stick frying pan over medium heat. Fry the breaded fish from one side until golden brown. Before turning the fish, add the rest of the oil into the pan and fry the other side until golden brown.
Serve the fries with crispy breaded fish and ketchup.
