Chop the onions and garlic coarsely. Heat the olive oil in a pot over medium heat and fry the onions and garlic until the onions turn translucent.
Add the meat and fry for approx. 3-5 minutes. Turn regularly until browned all over.
Stir in the vegetable broth, tomato sauce, and canned tomatoes.
Add the spices, cover your pot with a lid and let simmer for approx. 1.5 hours. Stir every 20 minutes.
Dice the carrots and sweet potatoes. After 1,5 hours add them into the pot and let simmer for approx. 30 minutes until the sweet potatoes are cooked.
Cook the rice according to the package instructions and serve with the estofado.
