Put the chicken, lemon juice, paprika powder, honey, olive oil, salt and pepper into a bowl, mix well and set aside.
Preheat the oven to 400 °F.
Half the tomatoes, cut the zucchinis lengthwise into quarters and slice them. Cut the pepper into thin slices and add everything into a baking dish.
Add the olive oil, salt, pepper and lemon juice into the baking dish and mix well.
Cut the mozzarella into slices. Place the chicken on top of the veggies and top with the mozzarella slices.
Bake the chicken for approx. 25 minutes in the oven. Serve hot.
