Preheat the oven to 350 °F.
Thinly slice the onion. Cut the zucchini and sweet potatoes into approx. ½ in thick slices and put everything in a bowl.
Add the salt, pepper, canola oil and balsamic vinegar and mix well.
Spread sweet potatoes, zucchini, and onions on a baking tray lined with parchment paper. Bake in the oven for 20 minutes.
Heat a small pot over medium heat. Add the honey, soy sauce, mustard, and vinegar, bring to a boil, stirring constantly and set aside.
Rinse the salmon and pat dry. Season with salt and pepper and brush with the marinade.
Take the baking tray out of the oven. Place the salmon on top of the veggies and bake for 12-14 minutes.
Serve the salmon with the sweet potatoes, onions, and zucchini.
