Prepare the quinoa according to the package instructions.
Slice the garlic. Heat the olive oil in a pan over medium heat. Add the garlic and rosemary and fry for approx. 30 seconds.
Halve the tomatoes, add into the pan and fry for approx. 5 minutes stirring occasionally. Put the tomatoes into a bowl.
Finely chop the parsley and mint and add into the bowl alongside the quinoa.
Add the feta into the bowl and mix well.
Season with salt and pepper, sprinkle lime juice on top and serve with the salmon.
