Clean and thinly slice the mushrooms. Cut the green onions into rings.
Heat the canola oil in a non-stick frying pan over medium heat. Fry the gnocchi until golden brown and set aside.
Heat the canola oil in the same pan and fry the green onions and mushrooms for approx. 3-4 minutes until the vegetables start to brown.
Deglaze with white wine and reduce to half.
Stir in the vegetable broth, sour cream, and mustard and let simmer until the sauce is creamy.
