Preheat the oven to 400 °F.
Cut the onion into eighths. Cut the zucchini into quarters and cut into approx. 1 in slices, halve the tomatoes and add everything into a baking dish.
Finely chop the garlic and dice the tofu. Add the garlic, olive oil, honey, soy sauce to the baking dish and mix thoroughly.
Wash the potatoes, cut into bite size pieces and add into the baking dish.
Add wine and spices and mix well.
Seal the baking dish with tinfoil and bake for approx. 30-35 minutes.
Serve the tofu with veggies on a plate and top with chives.
