Preheat the oven to 350 °F.
Slice the onion and put in a bowl.
Clean the mushrooms, halve the tomatoes and add to the bowl with olive oil, balsamic vinegar, and rosemary. Mix well.
Spread onto a baking tray lined with parchment paper and bake in the oven for approx. 15 minutes.
Prepare the rice according to the package instructions.
Peel and remove the pit from the avocado, put in a bowl and mash with a fork. Season with salt and pepper.
