Slice the onion, tomato, and gherkins and set aside.
Rinse and drain the Jackfruit in a colander. Transfer the jackfruit to a kitchen towel, close and squeeze to get rid of any excess water.
Heat the canola oil in a non-stick frying pan over high heat. Add the jackfruit and fry for approx. 5-7 minutes, stirring occasionally.
Turn the heat to medium, add the barbecue sauce and let simmer for approx. 2-3 minutes stirring occasionally.
Toast the burger buns and assemble the burger with salad, tomato, pickle, onion, jackfruit, and red cabbage.
