Add the oats, hot coffee, milk, sugar and chocolate into mason jar, close with the lid and set aside for 15 minutes.
Drain the cherries and collect the juice. Mix 2-3 tablespoons of the juice with the starch and bring the remaining cherry juice to a boil. Add cinnamon and sugar. Stir in the starch mixture and cherries and allow to thicken, stirring until it thickens.
