Add the lime juice, honey, and salt to a bowl.
Finely chop the onion and chili and add to bowl.
Cut the salmon into approx. ¾ in cubes and chop the cilantro coarsely. Add both to the bowl and let sit for approx. 40 minutes in your fridge.
Peel the potatoes and cut into approx. ¾ in cubes.
Heat the olive oil in a non-stick frying pan over medium heat and fry the potato cubes for 8-10 minutes until golden brown and cooked. Season with salt and pepper.
Serve the salmon with crispy potato cubes and top with the sesame seeds.
