Dice the tofu.
Heat the canola oil in a non-stick frying pan over high heat. Fry the tofu until golden brown, remove from the pan and set aside.
Dice the tomatoes. Cut the spring onions into rings and put in two separate bowls.
Cut the chili into rings. Finely chop the shallot and garlic.
Heat the canola oil in the pan over medium heat. Fry the shallots, garlic, and chili until the shallots turn translucent, add the tomatoes and fry for approx. 5 minutes.
Add the soy sauce, pepper, green onion, tofu, and water and fry for another 2 minutes. Stir occasionally.
