Place the lentils in a colander and rinse well with cold water.
Peel the sweet potato and cut into approx. ¾ in cubes. Cut the pepper into thin slices and put everything into a bowl.
Cut the onion into thin slices. Finely chop the garlic.
Heat the coconut oil in a non-stick frying pan over medium heat. Fry the onions and garlic until the onions turn translucent.
Add the ingredients listed below together with the lentils, sweet potato, pepper. Let simmer for approx. 10-15 min until the sweet potatoes are cooked. Stir occasionally. Add some more water if necessary. Season with salt.
Coarsely chop the cilantro. Serve the curry and top with the cilantro.
