Finely dice the onion, garlic and carrot and put everything in a bowl.
Heat the olive oil in a pot over medium heat. Add the vegetables from the bowl and fry until the onions turn translucent. Add the veggie mince, and fry stirring occasionally until it starts to brown.
Deglaze with red wine, let simmer for approx. 1-2 minutes. Stir in the tomato paste.
Season with salt, pepper, basil, and nutmeg, cover with a lid and let simmer for approx. 15 minutes.
Cook the spaghetti according to the package instructions.
Serve the spaghetti with the bolognese and top with the basil.
