Prepare the quinoa according to the package instructions. Dice the tofu. Halve the tomatoes.
Slice the garlic. Heat the olive oil in a pan over medium heat. Add the garlic, tofu and rosemary and fry for approx. 30 seconds.
Add the tomatoes into the pan and fry for approx. 5 minutes stirring occasionally. Put the tomatoes into a bowl.
Finely chop the parsley and mint and add into the bowl alongside the quinoa.
Season with salt and pepper, sprinkle lime juice on top and serve.
