Peel and finely dice the potatoes and carrot. Finely chop the celery and add everything to a bowl.
Finely chop the onion and garlic.
Heat the olive oil in a pot over medium heat. Add the onions and garlic and cook until the onions turn translucent. Add the potatoes, carrots, and celery and fry everything for approx. 10 minutes until golden brown.
